Keto Shrimp Scampi with Shirataki Noodles

## Description
Classic shrimp scampi with a keto twist! Shirataki noodles replace pasta for a low-carb version.
## Ingredients
– 1.5 lbs large shrimp, peeled and deveined
– 2 packages (8 oz each) shirataki noodles, drained
– 6 tbsp butter
– 6 cloves garlic, minced
– 1/4 cup white wine (dry)
– 2 tbsp lemon juice
– 1/4 cup fresh parsley, chopped
– 1/4 tsp red pepper flakes
– Salt and black pepper to taste
– 2 tbsp olive oil
– Parmesan cheese for serving (optional)
## Instructions
1. Rinse shirataki noodles thoroughly and pat dry.
2. In a dry skillet, cook noodles over medium heat for 5-7 minutes to remove moisture. Set aside.
3. Season shrimp with salt and pepper.
4. Heat 2 tbsp butter and olive oil in a large skillet over medium-high heat.
5. Add shrimp and cook for 2-3 minutes per side until pink. Remove and set aside.
6. In the same skillet, melt remaining 4 tbsp butter.
7. Add garlic and red pepper flakes. Cook for 1 minute.
8. Pour in white wine and lemon juice. Simmer for 2-3 minutes.
9. Add cooked noodles and toss to coat in sauce.
10. Return shrimp to the pan and toss.
11. Garnish with fresh parsley and parmesan if desired.
