Keto Cloud Bread

## Description
Light, airy, and almost weightless! Cloud bread is a popular keto bread substitute made with just 3 ingredients.

## Ingredients
– 3 large eggs, separated
– 3 oz cream cheese, softened
– 1/4 tsp cream of tartar
– Pinch of salt
– 1 tbsp erythritol (optional, for slightly sweet version)

## Instructions
1. Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper.
2. Separate eggs, placing whites in a large bowl and yolks in a medium bowl.
3. Add cream cheese to egg yolks and mix until smooth.
4. Add cream of tartar and salt to egg whites.
5. Beat egg whites on high speed until stiff peaks form (about 3-4 minutes).
6. Gently fold 1/3 of egg whites into yolk mixture to lighten.
7. Carefully fold in remaining egg whites until just combined.
8. Spoon 6 mounds onto prepared baking sheet.
9. Flatten slightly and shape into rounds.
10. Bake for 25-30 minutes until golden brown.
11. Let cool completely on baking sheet.
12. Store in an airtight container for up to 3 days.
