Keto Vegetarian Stuffed Peppers

Colorful bell peppers stuffed with a savory mixture of cauliflower rice, cheese, and vegetables. Hearty and satisfying!

## Ingredients
– 4 large bell peppers (any color), tops cut and seeded
– 2 cups cauliflower rice
– 1 cup mozzarella cheese, shredded
– 1/2 cup parmesan cheese, grated
– 1/2 cup cream cheese, softened
– 1/4 cup onion, diced
– 2 cloves garlic, minced
– 1 cup spinach, chopped
– 2 tbsp olive oil
– 1 tsp Italian seasoning
– Salt and pepper to taste
– Fresh basil for garnish

## Instructions
1. Preheat oven to 375°F (190°C).
2. Place bell peppers in a baking dish, cut-side up.
3. Heat olive oil in a skillet over medium heat.
4. Sauté onion for 3-4 minutes until softened.
5. Add garlic and cook for 30 seconds.
6. Add cauliflower rice and cook for 5-6 minutes.
7. Stir in spinach until wilted.
8. Remove from heat and mix in cream cheese, mozzarella, and parmesan.
9. Season with Italian seasoning, salt, and pepper.
10. Divide filling among the 4 peppers.
11. Cover with foil and bake for 25 minutes.
12. Remove foil and bake for 10 more minutes until peppers are tender.
13. Garnish with fresh basil.
