Keto Mushroom and Cheese Omelette

## Description

## Ingredients
– 3 large eggs
– 1 cup mushrooms, sliced (cremini or button)
– 1/4 cup cheddar cheese, shredded
– 2 tbsp butter
– 1 tbsp olive oil
– 1 clove garlic, minced
– 2 tbsp fresh chives, chopped
– Salt and pepper to taste
– 1 tbsp heavy cream (optional, for fluffier eggs)
## Instructions
1. Crack eggs into a bowl and whisk with heavy cream, salt, and pepper.
2. Heat 1 tbsp butter and olive oil in a non-stick skillet over medium heat.
3. Add mushrooms and cook for 4-5 minutes until golden.
4. Add garlic and cook for 30 seconds. Remove and set aside.
5. Wipe skillet clean and add remaining butter.
6. Pour in egg mixture and let set for 1-2 minutes.
7. Lift edges with a spatula, letting uncooked egg flow underneath.
8. When mostly set, add mushrooms and cheese to one half.
9. Fold omelette in half and cook for 1 more minute.
10. Slide onto a plate and garnish with chives.
11. Serve immediately.
