## Description
A quick and satisfying beef stir fry loaded with low-carb vegetables. Ready in 20 minutes!
## Ingredients
– 1 lb flank steak, thinly sliced
– 2 cups broccoli florets
– 1 red bell pepper, sliced
– 1 cup snap peas
– 3 tbsp coconut aminos (or soy sauce)
– 2 tbsp sesame oil
– 1 tbsp ginger, minced
– 3 cloves garlic, minced
– 1 tsp xanthan gum (for thickening)
– 2 green onions, sliced
– 1 tbsp sesame seeds
## Instructions
1. Mix coconut aminos with xanthan gum and set aside.
2. Heat 1 tbsp sesame oil in a wok or large skillet over high heat.
3. Add beef slices in a single layer. Cook for 2-3 minutes until browned. Remove and set aside.
4. Add remaining sesame oil to the pan.
5. Add broccoli, bell pepper, and snap peas. Stir fry for 3-4 minutes.
6. Add garlic and ginger. Cook for 30 seconds until fragrant.
7. Return beef to the pan.
8. Pour in the sauce mixture and toss everything together.
9. Cook for 1-2 minutes until sauce thickens.
10. Garnish with green onions and sesame seeds.
