– 1 cup powdered erythritol
– 2-3 tbsp heavy cream
– 1/2 tsp vanilla extract
– Food coloring (optional)
## Instructions
1. In a bowl, cream together butter and sweetener until fluffy.
2. Beat in egg, vanilla extract, and almond extract.
3. In a separate bowl, mix almond flour, baking powder, and salt.
4. Add dry ingredients to wet ingredients and mix until a dough forms.
5. Divide dough in half and wrap in plastic wrap.
6. Refrigerate for at least 1 hour (or up to 2 days).
7. Preheat oven to 325°F (165°C). Line baking sheets with parchment paper.
8. Roll dough between two sheets of parchment to 1/4-inch thickness.
