## Description
Hearty, nutty bread made with ground flaxseed. High in fiber and omega-3s!
## Ingredients
– 2 cups ground flaxseed (flaxseed meal)
– 1/4 cup psyllium husk powder
– 2 tsp baking powder
– 1 tsp salt
– 1 tsp onion powder (optional)
– 6 large eggs
– 1/4 cup olive oil
– 1/4 cup boiling water
– 1 tbsp apple cider vinegar
– 2 tbsp sesame seeds (for topping)
## Instructions
1. Preheat oven to 350°F (175°C). Line a loaf pan with parchment paper.
2. In a large bowl, mix ground flaxseed, psyllium husk, baking powder, salt, and onion powder.
3. In a separate bowl, whisk eggs, olive oil, and apple cider vinegar.
4. Pour wet ingredients into dry ingredients and stir to combine.
5. Add boiling water and mix well. Let sit for 5 minutes.
6. The dough will thicken as it sits.
7. Transfer dough to prepared loaf pan and smooth the top.
8. Sprinkle with sesame seeds.
9. Bake for 50-55 minutes until firm and a toothpick comes out clean.
10. Cool in pan for 15 minutes, then transfer to a wire rack.
11. Cool completely before slicing (important for texture).
12. Store in refrigerator for up to 1 week or freeze for up to 3 months.
